French Madeleines

Madeleines — a light, delicate small cake. One of the lightest and easiest French cakes to make. No electric mixer or long oven time required — perfect with coffee or tea.

Ingredients

Start here, then move straight into the method.

  • 2 eggs at room temperature
  • 1/2 cup sugar
  • 3/4 cup flour
  • A pinch of salt
  • 1/2 teaspoon baking powder
  • 5 tablespoons melted butter
  • 1 teaspoon vanilla

Method

Follow the cooking sequence without leaving the page.

  1. Sift the flour, salt, and baking powder together.
  2. In another bowl, whisk the eggs with a hand whisk, then add the vanilla and sugar and whisk until the mixture becomes somewhat thick.
  3. Add the melted butter in two additions and fold with a spatula or spoon from top to bottom so the air does not escape from the mixture.
  4. Add the flour in three additions and fold from top to bottom until you have a smooth cake batter.
  5. Brush the madeleine molds lightly with butter and pour the batter into them.
  6. Bake the madeleines at 170°C for about 12 minutes only.
    Timers: 12 min
  7. Let the madeleines cool at room temperature and serve them.
