French Madeleines
Madeleines — a light, delicate small cake. One of the lightest and easiest French cakes to make. No electric mixer or long oven time required — perfect with coffee or tea.

Ingredients
Start here, then move straight into the method.
- 2 eggs at room temperature
- 1/2 cup sugar
- 3/4 cup flour
- A pinch of salt
- 1/2 teaspoon baking powder
- 5 tablespoons melted butter
- 1 teaspoon vanilla
Method
Follow the cooking sequence without leaving the page.
- Sift the flour, salt, and baking powder together.
- In another bowl, whisk the eggs with a hand whisk, then add the vanilla and sugar and whisk until the mixture becomes somewhat thick.
- Add the melted butter in two additions and fold with a spatula or spoon from top to bottom so the air does not escape from the mixture.
- Add the flour in three additions and fold from top to bottom until you have a smooth cake batter.
- Brush the madeleine molds lightly with butter and pour the batter into them.
- Bake the madeleines at 170°C for about 12 minutes only.Timers: 12 min
- Let the madeleines cool at room temperature and serve them.
