Lemon cake with yogurt and olive oil is one of the fluffiest cakes we have ever tried, and it won everyone over, young and old alike! Try it and you will absolutely love it.
Ingredients
- 1 1/2 cups all-purpose white flour
- 1 cup sugar
- 1/2 cup olive oil
- 1 cup yogurt
- 2 tablespoons lemon zest
- 1/4 cup lemon juice
- 3 eggs + 1 tablespoon vanilla
- A pinch of salt
- A pinch of baking soda
- 1 tablespoon baking powder
Method
- Start by mixing the yogurt with the olive oil.
- Add the sugar and beat the mixture until the sugar has dissolved, then add the lemon zest and lemon juice and continue beating.
- Add the eggs in batches with the vanilla and keep beating.
- Sift the flour then add it in batches, stirring the mixture with a wooden spoon or spatula and alternately adding the flour with the baking powder, baking soda, and salt.
- Transfer the fluffy lemon cake batter into the prepared cake pan greased with tahini or lined with parchment paper.
- Bake the fluffy lemon cake in a preheated oven at 180°C for about 45 minutes or until fully cooked, depending on your oven.Timers: 45 min
- Do not open the oven door during baking except in the final minutes to test doneness.
- Check the cake's doneness by inserting a wooden skewer — if it comes out dry, the cake is done.
- Remove the cake from the oven and set it aside to cool slightly while you prepare the sauce to pour over it.
- For the sauce: in a saucepan put 1/4 cup honey with 2 tablespoons lemon juice and a little lemon zest.
- When the honey and lemon juice are combined, remove from the heat and set the sauce aside to cool.
