Ingredients
- 3 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 3 eggs
- 2 tsp vanilla extract
- 2 tsp ground cinnamon
- 2 tsp lemon zest
- 2 cups sugar
- 1 1/4 cups vegetable oil
- 1/4 cup orange juice
- 4 cups peeled and finely chopped apples
- For the cake topping:
- 1 cup chopped walnuts + 1/2 cup brown sugar + 2 tbsp softened butter (rub together)
- For decoration:
- Powdered sugar
Method
- Beat the eggs with the vanilla, sugar and lemon zest for 10 minutes, or until the sugar has completely dissolved.Timers: 10 min
- Add the oil and beat well, then stir in the orange juice and whisk.
- Start adding the dry ingredients: add the flour, then the baking powder, then the salt, then the cinnamon, and mix well with the whisk.
- Place one-third of the chopped apples in the prepared pan or baking tray lined with parchment paper.
- Pour the batter over the apples arranged in the bottom.
- Arrange the remaining apples on top, then spread the walnut, brown sugar and butter mixture over the surface of the cake.
- Bake the apple and walnut cake in a preheated oven at 180°C for about 1 hour, monitoring as needed depending on your oven.Timers: 60 min
- When the cake has cooled, dust with powdered sugar and serve.
