Kunafa with Mozzarella

Ingredients

  • 2 cups kadayif (shredded kunafa dough) or ready-made kataifi
  • ½ cup fine semolina (or fine flour)
  • ½ cup melted butter
  • 2 tablespoons orange blossom water (or rose water)
  • Filling
  • 300 g mozzarella cheese
  • ½ cup milk
  • 2 tablespoons fine semolina
  • 1 tablespoon orange blossom water

Method

Follow the cooking sequence without leaving the page.

  1. Knead the shredded kunafa pastry (fark), semolina, butter and orange blossom water together, then press the mixture into a buttered baking pan.
  2. Make a very small hole in the center of the pan so you can see the color change as the bottom begins to brown; place the pan on the stove over medium heat and rotate it so the base browns evenly from all sides.
  3. In a nonstick pan, put the cheese with the liquid milk, fine semolina and orange blossom water; stir until the cheese melts, becomes stretchy and everything combines well.
  4. Spread the mixture over the pastry that was previously browned on the bottom, then invert the kunafa onto a plate larger than the pan.
  5. Pour syrup (qatra) over the surface of the mozzarella kunafa.
  6. Serve the mozzarella kunafa immediately, and offer extra syrup on the side for those who like more.
