Kunafa Cookies

Ingredients

  • 1 kg flour (5 or 6 cups)
  • 1/2 cup oil or ghee
  • 1 teaspoon mahleb
  • 2 tablespoons sugar
  • 1 tablespoon yeast
  • A pinch of salt
  • 1 cup yogurt
  • 1 tablespoon vinegar to help soften the dough
  • 1 cup liquid milk

Method

Follow the cooking sequence without leaving the page.

  1. Mix the dry ingredients first, then add the oil, vinegar, and yogurt, then mix and begin kneading the ingredients with the warm milk.
  2. If liquid milk is not available, it can be replaced with powdered milk, reconstituted with an appropriate amount of water.
  3. Knead well for at least 10 minutes until you have a homogeneous dough.
    Timers: 10 min
  4. Let the dough rest for half an hour before shaping.
  5. Divide the dough into medium-sized pieces, shape each into rounds or balls as suits kunafa cookies.
  6. Cover or dip the cookies in sesame, place them on a baking tray, and leave them to rest for about two hours.
  7. After the resting time, bake the kunafa cookies in a preheated oven at 180°C until they turn golden.
