Ingredients

  • 1 kg self-raising flour
  • 1 kg fine semolina
  • 1 kg brown sugar, minus 1/2 cup
  • Unsalted butter, one whole piece (500 g)
  • 1 tablespoon instant yeast
  • 1 tablespoon baking powder
  • 2 tablespoons fennel seeds
  • 1 tablespoon ground anise
  • 1/4 teaspoon cinnamon
  • 1 tablespoon mahleb

Method

Follow the cooking sequence without leaving the page.

  1. First sift and mix the dry ingredients: flour, semolina, baking powder, yeast, anise, fennel, cinnamon, and mahleb.
  2. Make a well in the center of the mixture.
  3. Previously, place the sugar in a pot over heat with enough milk to cover it until the sugar dissolves.
  4. Also, in another pot over low heat, cut the butter into thin cubes.
  5. Heat until it melts quickly.
  6. Pour the melted butter and the milk with dissolved sugar over the dry ingredients.
  7. Mix well to form a cohesive dough.
  8. Note: If the dough is sticky, do not worry — it must rest and ferment for one hour, after which you will notice it beginning to rise and firm up.
  9. After that, shape the disks using a ma'amoul mold or any mold used for this type of cookie.
  10. Place the cookies in a preheated oven at 190°C, then lower the temperature while baking.
