Ingredients

- 1 kg self-raising flour
- 1 kg fine semolina
- 1 kg brown sugar, minus 1/2 cup
- Unsalted butter, one whole piece (500 g)
- 1 tablespoon instant yeast
- 1 tablespoon baking powder
- 2 tablespoons fennel seeds
- 1 tablespoon ground anise
- 1/4 teaspoon cinnamon
- 1 tablespoon mahleb

Method
Follow the cooking sequence without leaving the page.
- First sift and mix the dry ingredients: flour, semolina, baking powder, yeast, anise, fennel, cinnamon, and mahleb.
- Make a well in the center of the mixture.
- Previously, place the sugar in a pot over heat with enough milk to cover it until the sugar dissolves.
- Also, in another pot over low heat, cut the butter into thin cubes.
- Heat until it melts quickly.
- Pour the melted butter and the milk with dissolved sugar over the dry ingredients.
- Mix well to form a cohesive dough.
- Note: If the dough is sticky, do not worry — it must rest and ferment for one hour, after which you will notice it beginning to rise and firm up.
- After that, shape the disks using a ma'amoul mold or any mold used for this type of cookie.
- Place the cookies in a preheated oven at 190°C, then lower the temperature while baking.
