Ingredients:

1 kg self-raising flour 1 kg fine semolina 1 kg brown sugar less half a cup Unsalted butter a full block, 500 g 1 teaspoon instant yeast 1 tablespoon baking powder 2 tablespoons cumin (shomar in dialect) 1 tablespoon ground anise 1/4 teaspoon cinnamon 1 tablespoon mahleb

Preparation:

First, mix the dry ingredients: flour, semolina, baking powder, yeast, anise, caraway, cinnamon, mahleb...

Then make a well in the center of the mixture...

Previously, place the sugar in a pot over heat with enough milk to dissolve the sugar

Also in another pot on low heat, cut the butter into thin cubes until it melts quickly

Add the butter and the melted sugar with the milk to the dry ingredients and mix well to form a cohesive dough

Note: If the dough is sticky, don’t worry, as it needs to rest for an hour to rise and then will puff and come together...

Then shape the cookies using a proper moustache-shaped mold or the usual cutter for this type of cookie...

Place the cookies in a preheated oven at 190 C and then lower the heat as they bake...
