Ingredients

  • 1 kilogram green beans or slender or wide green beans
  • The size and type depend on what is available and your preference
  • 3 red bell peppers
  • 1 cup chopped walnuts
  • 5 cloves garlic, finely mashed
  • 1 tablespoon salt
  • 2 cups vegetable oil or more as needed to fully cover the lobia in the jar

Method

  1. Blanch the beans until just tender, not fully cooked to prevent crumbling later. After blanching, drain and place on paper towels to remove liquids
  2. Make the filling : Finely chop the red peppers and place in a sieve; press well to remove all liquids
  3. Break the walnuts and grind the garlic; mix the peppers with walnuts and garlic and add 1 tablespoon salt (adjust to taste). Stir well
  4. Then in an appropriate pickling jar, place a layer of beans, then a layer of filling...
  5. You can invert the jar top-to-bottom and leave it like that for a day to remove all liquids and air inside the jar.
  6. Then add vegetable oil and optionally a little olive oil, or just one of the two according to preference and availability.
  7. Seal the jar well and it will be ready to eat after a few days.
