Lentil kibbeh... a vegetarian recipe that is inexpensive and tastes amazing. You must try it

Ingredients

  • 1 cup yellow cracked lentils
  • 1 cup fine bulgur
  • 2 large onions
  • 1 cup olive oil
  • 1 tablespoon sweet pepper paste
  • 1 tablespoon tomato paste
  • A pinch of salt
  • A pinch of cumin

Method

  1. Boil the lentils until fully cooked, leaving just a very small amount of water in the pot.
  2. Add the bulgur to the lentils, stir, and turn off the heat.
  3. Leave the bulgur grains to puff up.
  4. Meanwhile, finely chop the onions and sauté them in the olive oil over the heat until lightly golden.
  5. Add the tomato paste and sweet pepper paste to the onions, stir briefly, then turn off the heat.
  6. Add this sautéed mixture to the lentils and bulgur in the pot, along with the salt and cumin, and stir.
  7. Let them sit for a short while until they are warm, then begin kneading them together.
  8. Shape the lentil kibbeh as desired, or spread it in a serving dish.
