  • 4 ripe bananas
  • 2 level tsp baking soda
  • 1 cup plain yogurt
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 1/2 cups brown sugar
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp ground cinnamon
  • 2 tsp baking powder
  • 1/4 tsp salt

Method

  1. In a bowl, mash the bananas with a fork until smooth.
  2. Add the yogurt and baking soda to the bananas, stir and set aside.
  3. In a second bowl, combine the sugar, eggs, vanilla and oil and whisk well with a whisk or handheld mixer until the sugar dissolves.
  4. In a third bowl sift the flour and add the cinnamon, baking powder and salt, then mix.
  5. Begin mixing the sugar mixture with the bananas and beat with a whisk, then gradually add the flour and stir.
  6. Preheat the oven to 180°C.
  7. Pour the batter into a pan greased with butter and dusted with flour.
  8. Put the pan in the oven and bake for a full hour at medium temperature; place it on the middle rack and monitor.
  9. Remove it from the oven and let it cool well at room temperature before serving.
