Spinach pie with walnuts and pomegranate is one of the tastiest pastries, and it can be kept in the freezer until needed.

Ingredients

  • 5 cups whole wheat flour
  • 2 tbsp powdered milk
  • 2 tbsp active dry yeast
  • 2 tbsp sugar
  • A pinch of salt
  • 1/2 cup vegetable oil
  • 2 cups warm water
  • Fresh green spinach, well washed and dry
  • Juice of 2 lemons, or to taste
  • 1 tbsp sumac
  • Salt
  • 1/2 cup pomegranate seeds
  • 1/2 cup walnuts, coarsely chopped
  • 2 tbsp olive oil
  • 1 tsp pomegranate molasses
  • Hot pepper or chili flakes, to taste
  • 2 dry onions, finely chopped

Method

  1. Start by making the pastry dough. In a deep bowl, combine the yeast, sugar, and warm water. Mix until the yeast dissolves slightly, then add 2 cups of flour and the salt, and leave the mixture aside for a few minutes.
  2. After a short while, add the remaining flour to the dough ingredients.
  3. Also add the powdered milk and oil, and knead well until you get a smooth, cohesive dough.
  4. Cover the dough and set it aside, then start preparing the spinach filling.
  5. After washing the spinach well and drying it, chop it finely.
  6. Place the spinach in a deep bowl, add the finely chopped dry onion, and mix the spinach and onion with the salt, pomegranate molasses, lemon juice, and olive oil. Finally, add the pomegranate seeds and walnuts and mix well.
  7. You can add more lemon juice to taste.
  8. Roll out the dough on a flat surface. Cut it into circles. Place a spoonful of filling inside each circle and seal it well on all three sides to form a triangle. You can also seal the dough from the middle, then from the bottom and top, to get the shape you want for the spinach pies.
  9. Bake the pies in a preheated oven at 180 degrees for 12 minutes, or until cooked through and lightly browned, depending on how strong your oven is.
