Eish El-Saraya (Arabic Bread Pudding)

Eish El-Saraya — a homemade recipe, simple and delicious
Ingredients
Start here, then move straight into the method.
- 10 slices of soft white sandwich bread with the crusts removed
- 4 cups milk
- 5 tablespoons cornstarch
- 3 tablespoons sugar
- 1 tablespoon orange blossom (or flower) water
- 1 tablespoon rose water
- One can of clotted cream (qimar) — optional
- Pistachios for garnish
- Syrup (Qatr / Sheera)
- 3/4 cup sugar
- 1 cup water
- a squeeze of lemon juice

Method
Follow the cooking sequence without leaving the page.
- Place the toast pieces on a baking tray and put them in the oven for a few minutes until they are lightly golden. Remove and let them cool.
- Prepare the syrup by putting the sugar with a little water and a small squeeze of lemon into a saucepan over the heat and stir until you get a light brown color, then carefully add the rest of the water and let the syrup boil for two minutes.
- Pour the syrup evenly over the toast pieces.
- Prepare the cream: put the milk, cornstarch, and sugar in a pan, stir well and place over heat, stirring constantly until the mixture thickens well.
- Spread the mixture over the toast, and if you want to use qaimar (thick cream), mix it with the cornstarch-and-milk mixture before pouring it over the toast.
- Smooth the top well until you obtain an even surface.
- Leave Eish El-Saraya to cool at room temperature, then place it in the refrigerator to chill well.
- When serving, garnish with pistachios.
