  • 1/2 kg okra, small pods or a bag of frozen okra
  • 1/2 kg beef, cut into small pieces or as desired
  • garlic
  • fresh cilantro, chopped
  • 1 tablespoon tomato paste
  • ripe tomatoes, chopped
  • pomegranate molasses
  • salt to taste
  • ghee or vegetable oil, as desired

Method

  1. Fry the okra in a little oil, or place it on a tray, brush with a little oil, and roast in the oven until browned.
  2. In a pot over heat, add a little of the ghee or oil and fry the beef until browned. Then add the chopped cilantro and minced garlic and stir until the garlic turns golden. Add one cup of water and let the beef boil over medium heat for about ten minutes until tender. After that, add the tomato paste and the chopped tomatoes and let the ingredients boil for a while; then add the okra, salt, and pomegranate molasses... Once it boils, simmer the okra stew for another about ten minutes until the broth thickens.
  3. Serve with vermicelli rice alongside the okra stew...
