Musakhan chicken — a practical, flavorful recipe. We recommend making it if you have a batch of roasted or boiled chicken pieces from the previous day and aren’t sure how to use them.
Ingredients
- Chicken breasts or leg pieces, boiled with aromatics
- A large quantity of onion wedges
- Salt
- Sumac
- Marqooq (saj) flatbread
- Water and flour for a paste to seal the bread

Method
- Boil the chicken thighs until cooked through
- Cut the onion into wedges and sauté them in oil until they soften
- Add pieces of the boiled chicken and stir occasionally until the chicken becomes thin like strands
- Add salt and a generous amount of sumac and stir, then remove the filling from the heat
- Cut the saj (marqooq) bread into triangles and distribute the filling inside the triangles after it has cooled slightly
- Roll the musakhan into rolls and seal the edge with a glue made of water and flour
- Arrange them on a baking tray and bake them just until they dry
- Serve the chicken musakhan hot
