Musakhan chicken — a practical, flavorful recipe. We recommend making it if you have a batch of roasted or boiled chicken pieces from the previous day and aren’t sure how to use them.

Ingredients

  • Chicken breasts or leg pieces, boiled with aromatics
  • A large quantity of onion wedges
  • Salt
  • Sumac
  • Marqooq (saj) flatbread
  • Water and flour for a paste to seal the bread

Method

  1. Boil the chicken thighs until cooked through
  2. Cut the onion into wedges and sauté them in oil until they soften
  3. Add pieces of the boiled chicken and stir occasionally until the chicken becomes thin like strands
  4. Add salt and a generous amount of sumac and stir, then remove the filling from the heat
  5. Cut the saj (marqooq) bread into triangles and distribute the filling inside the triangles after it has cooled slightly
  6. Roll the musakhan into rolls and seal the edge with a glue made of water and flour
  7. Arrange them on a baking tray and bake them just until they dry
  8. Serve the chicken musakhan hot
