Ingredients

  • 1 kg loubia (green beans)
  • 1 kg tomatoes
  • 1 small onion
  • 2 garlic cloves
  • Salt
  • Olive oil
  • Hot pepper - optional

Method

Follow the cooking sequence without leaving the page.

  1. Cut the green beans into medium-sized pieces after removing the stem ends.
  2. Wash them and parboil (half-cook) them (you may skip parboiling if you prefer).
  3. Chop or grate the tomatoes and set aside.
  4. Chop or grate the onion and garlic and sauté them in oil until softened. Then add the tomatoes and let them simmer briefly. You can add 1 cup of water if the tomato juices are not sufficient.
  5. Add the green beans, toss with a pinch of salt, and cook over low heat until the beans are well cooked in the oil.
  6. Serve loubia bzeit cold at room temperature or chilled from the fridge. It is very delicious with saj flatbread and sweet green pepper.
