Ingredients

Start here, then move straight into the method.

  • 6 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon ground mahlab (mahlab powder)
  • 2 tablespoons yeast, dissolved with 1 tablespoon sugar in a little warm water
  • 1 cup ghee (or vegetable shortening)
  • 2 to 3 cups liquid milk, depending on the type of flour

Method

Follow the cooking sequence without leaving the page.

  1. Place the ghee and milk in a saucepan over heat until the milk warms and the ghee melts.
  2. Add the sugar and stir over low heat until the sugar fully dissolves.
  3. In a bowl, put the flour and the yeast mixture, then gradually pour the milk mixture over them and knead.
  4. Continue kneading until you have a cohesive, soft dough that doesn’t stick to the hands.
  5. Let the dough rest for two hours or more until it doubles in size.
  6. Shape the ka'ak as desired and place the pieces on parchment paper on a baking tray.
  7. Bake in a preheated oven at 180°C for 10 to 12 minutes, watching closely.

  8. Serve the milk ka'ak once cooled to room temperature.
