Bukhari Rice with Meat

Bukhari rice — you’ll definitely like it. Here’s the method.
Ingredients
Start here, then move straight into the method.
- 1 kg long-grain rice
- 1 kg lamb or beef, large pieces
- 1 kg tomatoes
- 3 onions
- 2 grated carrots
- 1 cup ghee (samneh)
- ½ cup raisins
- ½ cup peeled almonds
- 5 cardamom pods
- 2 cinnamon sticks

Method
Follow the cooking sequence without leaving the page.
- Wash the rice then soak it in warm water for one hour.
- Slice the onion into thin wedges then fry it in ghee until it turns light brown.
- Add the carrots and meat pieces and stir with the onion until the meat browns.
- Purée the tomato then remove the skins and add it over the meat, and stir.
- Cover them with water then add cinnamon, cardamom pods and salt... cover the pot and leave it over medium heat until the meat is cooked.
- Wash the raisins and add them to the meat after it cooks, then add the drained rice... add water if necessary—the water should cover the rice.
- Leave the pot on high heat until the water boils, then cover and reduce to medium heat until the rice is cooked.
- Meanwhile, fry the almonds in ghee and set them aside.
- Pour the Bukhari rice into a serving dish and garnish with the fried almonds.
