- Seasonings for boiling the lamb
- 2 cups American rice
- Ready-made kabsa spices
- Salt
- Finely chopped ripe tomato
- Onion powder or finely chopped dried onion
- Oil or ghee

Method
- Fry the pieces of meat in oil or ghee until they brown; add aromatics, salt, a pinch of kabsa spice, a chopped tomato, and water, and let it simmer on medium or low heat until the meat is tender
- In a second pot... put a little oil and sauté the chopped tomato with a pinch of salt, onion powder, and half a spoonful of kabsa spice
- When the water released from the tomato reduces, add the washed and drained rice and stir gently... add more salt and kabsa spices to taste... then add from the meat's cooking water at a rate of two cups of water for every one cup of rice... bring the rice to a boil, then leave it on low heat until cooked
- Pour the rice into a serving platter, arrange the meat pieces on top, then garnish with nuts and serve hot
- Serve yogurt and green salad alongside the lamb kabsa
