How to Make Ramadan Suhoor Mashateeh
A very delicious and very popular pastry, especially during the blessed month of Ramadan. Mashateeh are an important part of the suhoor table, served with labneh and cheeses.
Ingredients

- 4 cups flour
- 1 cup warm water for kneading
- 1 teaspoon salt
- 3 tablespoons sugar
- 1/2 cup milk
- 3 tablespoons vegetable oil
- 2 tablespoons yeast
- 1 egg
- Note
- As for the egg in the ingredients, you can use the egg white and separate the yolk to brush the top, or omit it
Method
Follow the cooking sequence without leaving the page.
- First, mix the liquid ingredients, then add the yeast, salt, and sugar... stir the mixture by hand or with a mixer, then add the flour...
- Knead all the ingredients... As for the flour, add it gradually to make sure how much the dough needs, as you may need less than 4 cups of flour.
- Let the dough rest for 4 to 6 hours so it develops the right texture, then roll it out and shape it as desired.Timers: 360 min
- Brush the tops of the mashateeh with egg yolk, a pinch of salt, a drop of vinegar, a sprinkle of anise, nigella seeds, and sesame or thyme, حسب الرغبة...
- Bake the mashateeh in the oven over medium heat from the bottom, then once it is cooked and browned on the bottom, bake the shatah or mashateeh from the top...
- Serve the mashateeh for suhoor with labneh, cheese, jam, and tea
- You can add cheese, thyme, or any filling on top of the mashteh, or leave it without any filling as desired
