- 1 kilo lamb filet, or as much as available
- 1/2 head garlic, peeled
- 2 hot peppers, red or green
- 1/2 teaspoon whole cloves
- 1 teaspoon rosemary
- 1/2 teaspoon whole black peppercorns
- 1 teaspoon cardamom pods
- 2 bay leaves
- Salt to taste
Method
- Cut the lamb filet lengthwise, making the cut only to the middle of the meat.
- Open the meat and stuff it with garlic, pepper, seasonings, and salt, then close it and tie it with kitchen twine similar to a roast. Fry the lamb filet in a little fat or oil, turning so it takes on a golden color on all sides.
- Place the filet in a roasting pan and put it in the oven for at least one hour or until cooked through.
- Serve the lamb filet with white rice and the sauce made from the meat stock. Also serve with roasted or boiled vegetables such as broccoli, potatoes, carrots, and peas.
