Ingredients

  • Fish as desired
  • Basmati rice, soaked and drained
  • 3 large onions
  • Vegetable oil
  • Fish seasoning
  • Ground cumin
  • Ground cinnamon
  • Salt
  • Fried nuts for garnish

Method

  1. First, fry the fish in plenty of hot oil. In another pot, sauté 2 onions finely chopped in a little oil until the onions turn dark brown.
  2. Then add about 3 cups of water, plus the heads and tails of the fried fish, the spices, and the salt.
  3. Let the water boil until it becomes dark brown. We'll use this strained broth to cook the rice.
  4. In the rice pot, sauté a finely chopped onion until soft, then add the rice, salt, and spices, and add two cups of broth for each cup of rice; you may use plain water if the broth isn't enough. Cover and cook the rice over low heat.
  5. Remove the bones from the fish and arrange it on top of the rice, garnish with nuts; you can serve tarator or tajin on the side.
