Creamy Broccoli Soup

- 1 dry onion
- 1 tablespoon butter
- 1 head broccoli
- 1 potato
- Chicken or beef stock
- a pinch of black pepper
- a pinch of nutmeg
- 500 ml fresh cooking cream
- Salt
Method

- Sauté the chopped onion in a little butter; you can add vegetable oil if desired or available.
- Add the cooked broccoli to the onions along with one potato cut and half-boiled, and sauté them for several minutes.
- Add chicken or beef broth—whichever you have. Bring the mixture to a boil for about 10 minutes, then remove from heat. Purée it with an electric blender. Return the mixture to the stove, add the pepper, nutmeg and cream, and let them simmer for about 5 additional minutes.Timers: 10 min
- Garnish the cooked broccoli soup at serving with a little fresh cream as shown in the accompanying photo.
