  • 1 1/2 cups flour
  • 1/4 cup cocoa powder
  • 3/4 cup powdered sugar
  • 180 grams butter
  • 1 egg
  • 1 tablespoon liquid milk
  • a pinch of vanilla
  • a pinch of salt
  • dark chocolate melted in a double boiler
  • coarsely ground pistachios for garnish

Method

  2. Wrap the dough in plastic wrap and refrigerate for at least 1 hour to rest.
    Timers: 60 min
  3. Place the dough between two sheets of plastic or parchment paper and roll it out. Cut the dough into the shapes you want.
  4. Arrange the sablés on a baking tray and bake at 180°C for about 8 to 10 minutes only.
    Timers: 10 min
  5. When the sablés have cooled, fill them with melted chocolate and sandwich two pieces together. Also dip the cookies in chocolate on the outside and garnish with pistachios.
  6. Place the sablés in the refrigerator until the chocolate sets.
