Healthy Eggplant Roll Recipe

- 1 large eggplant
- 2 potatoes
- a pinch of ground cumin
- a pinch of black pepper
- 1 cup parsley
- olive oil
- 3 cloves garlic, crushed
- 2 tomatoes
Method

- Slice the eggplant very thinly and grill the eggplant slices on an electric grill or any method you prefer.
- Boil the potatoes and mash well; add the ground cumin and black pepper with the chopped parsley and olive oil, and mix all these ingredients well...
- Spread the grilled eggplant slices and place a small amount of the potato filling on each slice, then roll them up into a roll.
