How to Make Rice Halva

- 2 cups Egyptian rice
- 4 cups water for cooking the rice
- 1 cup sugar, or to taste
- 1 tablespoon ground mastic
- 2 cups mozzarella cheese
- 2 tablespoons powdered milk
- 1 tablespoon rose water
- 1 tablespoon orange blossom water
- Pistachios for garnish
Method
- We wash the rice well and leave it soaked in water for one hour.
- After the required soaking time, we put the rice in a pot over the heat until it cooks and absorbs all the liquids. Then we turn off the heat and grind the rice well until it becomes smooth like a paste.
- On low heat we put the rice with sugar to taste and add ground mastic and mozzarella or akawi cheese depending on what you have...
- (We add powdered milk at this stage if available, as desired...)
- When the cheese melts we add a tablespoon of orange blossom water and rose water and pour the mixture into serving plates and garnish the rice halva with ground pistachios
