How to Make Cheese Halva

Everyone loves cheese halva, so cooks compete to make it. Here is this easy, tested homemade recipe. Delicious and quick!

Ingredients

  • 1/2 kilogram mozzarella cheese
  • 1 cup flour
  • 1 cup water
  • 1/2 cup sugar
  • 1/4 cup rose water
  • cream or qimr
  • mastic
  • pistachios for garnish
  • syrup or sugar syrup

Method

Follow the cooking sequence without leaving the page.

  1. Dissolve the sugar in the water and place over heat. As soon as it boils, add half the orange blossom water and the cheese.
  2. When the cheese begins to melt, gradually add farikha flour (طحين الفرخة) and stir until the mixture thickens and you obtain a dough.
  3. Lift the dough upward with the spoon while stirring. Add the remaining orange blossom water, ground mastic, and a pinch of sugar, then remove the halva from the heat.
  4. Spread the halva onto a piece of plastic wrap brushed with syrup (qater). When it cools, fill it with fresh clotted cream or qimeer and cut it.
  5. Garnish the cheese halva with pistachios and lemon blossom, and serve it cold with syrup (qater) or shireh.
