How to Prepare Mafrouka

Ingredients
- 1 cup sugar
- 1 cup coarse semolina
- 1 cup water
- Three quarters cup ghee or 100 grams
- 1 tablespoon orange blossom water
- 1 tablespoon rose water
- Cashews for garnish
- Almonds for garnish
- A pinch of pistachios for garnish
- Ashta or qaimar, to taste

Method
- Put the sugar in a pot over the heat until it caramelizes and melts.
- Carefully add the water over it and stir until the sugar dissolves; then remove the pot from the heat.
- In a skillet, toast the semolina until it turns golden.
- Add the ghee to the semolina, then the orange blossom water, rose water, and the dissolved sugar; stir to form a dough.
- Pour the dough into the serving dish, spread it out, and let it cool.
- When cooled, spread the ready-made ashta over it.
- Toast the almonds and cashews and decorate the top of the ashta.
- Sprinkle a little ground Aleppo pistachio.
- You may serve qatr (sugar syrup) or shireh alongside the mafrouka.
