Ingredients
- 500 g flour
- 250 g ghee
- 1 teaspoon vanilla
- 100 g water
- 200 g sugar
- 12 g sugar syrup
- Sesame mix:
- 250 g sesame
- 50 g sugar
- orange blossom water
- rose water
- coarsely ground pistachios
Method
- Blend flour and ghee in a mixer, or mix by hand. Mix well with vanilla until the flour absorbs the ghee ...
- Then in another pot, combine water and sugar and stir until the sugar dissolves...
- Pour the syrup over the dough and stir gently, not kneading. Let the dough rest about half an hour until it dries. If it sticks to your hand, give it more time to dry.
- Now start the sesame mix...
- Roast the sesame with a little sugar and a bit of syrup, then mix well with orange blossom water and rose water, ensuring the sesame stays spread on a tray...
- When the dough dries and rests, shape into circles. Press the top of each circle into the sesame-syrup mixture so it sticks, and press the pistachios on the bottom so the top is covered with sesame and the bottom with pistachios.
- Bake the barazek in a hot oven until browned, about 12 minutes to avoid hardness. Remove from the oven and let cool completely and set before transferring to the serving dish.Timers: 12 min
