Vegetarian Kibbeh Without Meat

Ingredients

- 3 cups fine bulgur
- 5 cups boiling water
- 1 1/2 tablespoons dried marjoram
- 1 tablespoon sweet red pepper powder, paprika
- black pepper
- salt
- seven-spice blend or any mixed spice available
- 3 cups flour
- 1 1/2 cups vegetable oil
- Note
- It is important to use the same cup for all the ingredients, meaning the same cup size for the bulgur, flour, and oil.
- It is best to keep a small bowl of oil beside you while preparing the kibbeh, and you can also moisten your hands with oil while kneading the kibbeh.

Method
Follow the cooking sequence without leaving the page.
- Soak the fine bulgur in the boiling water, cover it with kitchen plastic wrap, and leave it to soak for some time until the bulgur grains swell, for about 1 hour.Timers: 60 min
- After the required time, add the different spices over the bulgur: marjoram, paprika, mixed spice, black pepper, and salt.
- Knead the bulgur and spice mixture very well until the spices are fully combined.
- Then begin adding the flour gradually... you may not need all of the flour, so add it while continuing to knead.
- Add the first cup of vegetable oil as well; you may not need the full amount of oil, so add the flour and oil in stages according to the dough's needs.
- Knead the bulgur with the flour and oil well until you get a firm dough with a texture suitable for shaping kibbeh.
- As for the fillings for vegetarian kibbeh, they are up to you... you can use a mushroom and onion filling, chard, or spinach and chickpeas, depending on what vegetables are available and what you prefer.
