Pastry dough — one simple, versatile recipe

Ingredients

Start here, then move straight into the method.

  • 5 cups all-purpose flour
  • 2 tablespoons yeast
  • 1 tablespoon sugar
  • A pinch of salt
  • 3 tablespoons oil (vegetable or neutral oil)
  • 1/2 cup plain yogurt
  • 1 1/2 cups warm water, or as needed depending on the flour

Method

Follow the cooking sequence without leaving the page.

  1. Mix the yeast, yogurt and warm water. Leave for 10 minutes to activate the yeast.
    Timers: 10 min
  2. Add the remaining ingredients and knead by hand for 10 minutes (not less). Add water if needed, but in small amounts. You should end up with a cohesive, soft dough.
  3. Let the dough rest for one hour or until ready to use.
  4. Use this dough for cheese rolls, chocolate rolls, za'atar pastries, pizza, honeycomb pastries and other baked goods.
