Chicken Sandwich with Coconut Sauce

Ingredients

- 2 boneless chicken breasts
- 1 tablespoon vegetable oil
- a pinch of black pepper
- 1 onion
- 1/2 green bell pepper
- 1/2 red bell pepper
- 1/2 yellow bell pepper
- 1/2 cup cooked soybeans (edamame)
- Thai coconut sauce*

- For the coconut sauce, you can use packaged Thai or Asian coconut sauce mixes available in stores and prepare them according to the instructions on the packet or can.
- It is important not to add salt to the ingredients because the ready-made sauce contains a lot of salt.
- Homemade coconut sauce
- 1 1/2 cups coconut milk
- 3 cloves garlic
- 1 tablespoon salt
- 1 tablespoon curry powder
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 1/2 teaspoon turmeric or a pinch of yellow coloring
- 1 teaspoon black pepper
- 1 hot pepper, to taste
- How to prepare the coconut sauce
- In a somewhat deep pot, heat the vegetable oil and sauté the finely chopped onion and crushed garlic until they soften.
Method
Follow the cooking sequence without leaving the page.
- Rinse the chicken breasts well. Slice the chicken into long, thin strips.
- Fry the chicken strips in vegetable oil or a little sesame oil as desired and available.
- Set aside the fried chicken and sprinkle with black pepper; it s best not to add salt since the sauce will be salty.
- Slice the onion into wedges, sauté a few minutes in oil until softened, then add the colorful peppers in long, thin strips.
- Once the onion and peppers soften, add the edamame and toss with the vegetables.
- Finally add the fried chicken strips to the mixture and stir well; when ingredients are cooked and the liquid has reduced, add the coconut sauce.
- For the coconut sauce, you can use ready coconut sauce sachets available in markets and prepare them according to the package instructions.
- Be careful not to add extra salt since the prepared sauce already contains salt.
- When you add the coconut sauce in the final stage, stir for a few minutes until the sauce is well absorbed, then turn off the heat.
- Place a portion of the chicken and vegetables with coconut sauce inside the bread rolls without extra fillings.
- Add the finely chopped hot pepper if you want the sauce to be spicy. Add the coconut milk and all spices, add salt, and mix well.
- Stir until the sauce thickens slightly and all ingredients come together.
