Lentil Rishta

Ingredients

Start here, then move straight into the method.

  • 1 cup small whole lentils
  • 1 1/2 cups flour for the dough
  • 1 small onion for frying + 1 clove garlic (optional)
  • Olive oil
  • Salt

Method

Follow the cooking sequence without leaving the page.

  1. Remove impurities from the lentils, rinse them, place in a pot, cover with water, and boil until tender.
  2. Meanwhile, knead the flour with warm water (about half a cup) with salt and a little oil until a cohesive dough forms.
  3. Let it rest for about half an hour.
  4. After the dough rests, roll it out on a clean surface using a rolling pin and cut it into small squares.
  5. Add the dough pieces to the cooked lentils, let them simmer on low heat, and adjust salt to taste until the dough is cooked.
  6. Dice the onion and sauté it in olive oil until soft; garlic can be added if desired.
  7. Add the sautéed onion over the lentils and dough and stir continuously so the broth thickens slightly.
  8. Ladle the lentil rishta into serving bowls.
  9. Serve lentil rishta hot or cold.
