Lentil Rishta
Lentil Rishta is a vegetarian dish you will enjoy. Not very common but a very old recipe — simple ingredients based on lentils and dough. See the full method below.

Ingredients
Start here, then move straight into the method.
- 1 cup small whole lentils
- 1 1/2 cups flour for the dough
- 1 small onion for frying + 1 clove garlic (optional)
- Olive oil
- Salt

Method
Follow the cooking sequence without leaving the page.
- Remove impurities from the lentils, rinse them, place in a pot, cover with water, and boil until tender.
- Meanwhile, knead the flour with warm water (about half a cup) with salt and a little oil until a cohesive dough forms.
- Let it rest for about half an hour.
- After the dough rests, roll it out on a clean surface using a rolling pin and cut it into small squares.
- Add the dough pieces to the cooked lentils, let them simmer on low heat, and adjust salt to taste until the dough is cooked.
- Dice the onion and sauté it in olive oil until soft; garlic can be added if desired.
- Add the sautéed onion over the lentils and dough and stir continuously so the broth thickens slightly.
- Ladle the lentil rishta into serving bowls.
- Serve lentil rishta hot or cold.
