Rice with Lobia

Ingredients
Start here, then move straight into the method.
- Half a kilo of lobia cooked with oil and an onion
- 2 cups rice
- 2 large onions
- Water as needed for the rice
- Salt to taste
Method
Follow the cooking sequence without leaving the page.
- Finely chop one large onion, then sauté it in a little oil until softened
- Add the mashed, chopped, washed, and drained lobia to the onion and stir with the salt, then cover and leave over low heat until cooked
- In a new pot... sauté the finely chopped onions (2 onions) in oil until they turn a dark brown color
- Add the lobia cooked in oil on top of the dark onions and stir briefly, then add water (depending on the amount of rice)
- Let it boil for 5 minutes over high heat, then add the rice and stirTimers: 5 min
- Let it boil again for two more boils with the rice, then reduce the heat, cover the pot, and let it cook through
- Serve the rice with lobia alongside yogurt, cucumber and yogurt salad, or green salad
