Cooked Cauliflower Rice

Cooked cauliflower rice is an easy and very delicious vegan recipe... one of the recipes suited to those watching their weight and following a special low-calorie diet!

Ingredients

Start here, then move straight into the method.

  • 1 large cauliflower
  • 1 large onion
  • 3 cloves garlic, crushed
  • Salt
  • A pinch of ground cumin
  • Black pepper
  • 1/2 bunch fresh coriander
  • 2 tablespoons olive oil

Method

Follow the cooking sequence without leaving the page.

  1. Wash the whole cauliflower without cutting it. Grate the cauliflower using a cheese grater. You can chop the cauliflower and pulse it in a food processor, but the texture will be different; grating is preferable.
  2. Finely mince the onion and crush the garlic.
  3. In a skillet over medium heat, sauté the onion and garlic in a little olive oil until the onion softens and turns slightly golden.
  4. Add the grated cauliflower and stir it together with the onion and garlic.
  5. Cover the pan and season the cauliflower with salt and spices; you may add ground cumin if you like. Let the cauliflower cook over low heat for about 10 minutes.

  6. After the cauliflower has cooked in its own steam and without adding water, add the chopped cilantro and stir the mixture for several minutes.
  7. Transfer the cauliflower to a wide serving bowl and garnish with a little chopped fresh cilantro.
  8. Serve the cauliflower rice with seafood—such as shrimp/prawns—or any animal protein you prefer, or enjoy it as a 100% plant-based recipe.
