Roasted Chicken with Potatoes
Oven-roasted chicken with a fantastic marinade. Chicken isn’t complete without its eternal partner, potatoes — don’t forget them. Enjoy!
Roast chicken... the name alone makes us crave chicken :) The dish isn’t complete without potatoes, the chicken’s eternal twin :)
Ingredients
Start here, then move straight into the method.
- Chicken thighs
- Potatoes, cut into cubes
- Bay leaves
- Marinade for soaking the chicken
- 1/3 cup vinegar
- 3 tablespoons ketchup
- 1/3 cup plain yogurt
- 2 tablespoons honey
- 1/3 cup oil
- 1 teaspoon cinnamon
- White pepper
- Oregano
- Garlic powder
- Onion powder
- Paprika
- A generous spoon of crushed garlic
- Salt
- A little water

Method
Follow the cooking sequence without leaving the page.
- Clean the chicken, wash it, and drain it well.
- Mix all the marinade ingredients, and using a knife make slashes in the thighs so the chicken absorbs the marinade and cooks quickly and thoroughly.
- Soak the chicken in the marinade, preferably overnight but at least two hours.
- For roasting, place the chicken in a baking tray, add the diced potatoes, and put the tray in the oven until the chicken is cooked and browned.
