Indian puri — one of the best-known Indian breads. Served with grilled spiced chicken, chutneys or soups, and also nice with dairy and cheeses.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 tablespoon vegetable oil
  • 3/4 cup water
  • In a pot over medium heat, add a little oil and sauté one chopped onion until soft.

Method

  1. Mix the puri dough ingredients, add the water gradually and knead until smooth.
  2. Let the dough rest for 20 minutes.
    Timers: 20 min
  3. Divide the dough into rounds and roll each piece out to about 1 cm thickness.
  4. Deep-fry the rolled dough in plenty of hot oil. While frying, spoon hot oil over the top so the puris puff and form bubbles.
  5. When the puri is lightly golden, remove it from the oil.
  6. Add one chopped potato and one hot pepper, sprinkle a little ground cumin, and stir.
  7. When the vegetables soften, add half a can of cooked chickpeas, a pinch of salt and a pinch of turmeric for color. Stir and simmer until the vegetables are fully cooked.
  8. Blend all the ingredients until smooth to make the sauce.
