Wheat Pudding (Qamhiya)
Qamhiya is a rich, nourishing dessert made from peeled (hulled) wheat cooked with milk, sweetened and studded with nuts and aromatic flavors. Don’t miss this comforting dish.

Ingredients

- 1 kg hulled (polished) cracked wheat
- 2 liters liquid milk
- 500 g (½ kg) sugar
- 2 cans sweetened condensed milk
- Almonds, cashews and blanched pistachios
- A pinch of ground mastic
- Rose water and orange blossom water

Method
Follow the cooking sequence without leaving the page.
- Boil the wheat for only 10 minutes, then turn off the heat and leave it soaking overnight in the water it was cooked in.Timers: 10 min
- The next day you will find the wheat has softened from the heat of the water; put it back on the heat and simmer until the grains split open, stirring constantly.
- Meanwhile, soak the nuts in water long enough, then rinse them and let them soak again briefly in a little rose water and orange blossom water.
- Dissolve the sugar in the liquid milk, put them in a saucepan over the heat and stir constantly until they come to a boil.
- Drain the wheat well from its cooking liquid and add it to the milk, stirring until the mixture thickens slightly.
- Stir in sweetened condensed milk and continue stirring; then add the nuts and mastic and keep stirring until the qamhiya thickens to the desired consistency.
- Pour the qamhiya into serving glasses or bowls and optionally garnish with more nuts as desired.
- Allow it to cool to room temperature before serving; it can also be served chilled from the refrigerator.
