  • 12 digestive biscuits
  • 2 tablespoons spreadable butter
  • 1 tablespoon honey
  • 2 cups powdered milk
  • 1 cup sugar
  • 1 carton qashta cream
  • 170 g yogurt
  • 1 cup fine semolina
  • 1/4 cup sugar
  • 1 second carton qashta cream
  • 1/4 cup vegetable oil
  • A pinch of vanilla
  • 1/2 tablespoon baking powder
  • 1/4 cup water
  • Qatar syrup, or simple syrup
  • Pistachios for garnish

Method

  1. We start by preparing the first layer of the basbousa cheesecake. Finely crush the digestive biscuits and mix them with the butter and honey. Press the mixture into a cheesecake pan.
  2. Set the first layer aside and prepare the second layer. Mix the powdered milk with 1 cup sugar, the first carton of qashta cream, and the yogurt. Whisk well, then spread the mixture over the biscuit layer.
  3. Place the pan with the two layers in a preheated oven at 180 degrees for 10 minutes.

  4. Now prepare the third and final layer of the basbousa cheesecake. Mix the semolina with 1/4 cup sugar, the second carton of qashta cream, oil, vanilla, baking powder, and water. Mix well until you have a smooth, homogeneous mixture or dough.
  5. Add the dough over the first and second layers. Return the pan to the oven at 180 degrees for another 10 minutes.
