Eggplant Pizza

Eggplant pizza... you could call it a "fake" pizza because we'll replace the dough with eggplant. What do you think? :) Light, easy, and definitely vegan.
Ingredients
Start here, then move straight into the method.
- 1 large eggplant
- Salt
- Oil
- Pizza sauce

- Paprika
- Onion
- Olives
- Mozzarella cheese

Method
Follow the cooking sequence without leaving the page.
- Cut the eggplant into long slices about 2 cm thick
- Sprinkle salt on them and brush lightly with oil on both sides
- Place the eggplant slices on a baking tray, turn the oven on for top heat only and flip them until the eggplant softens on both sides
- Remove them from the oven and spread pizza sauce over them, add any vegetables you like, sliced olives and paprika, then sprinkle cheese on top
- Turn the oven on from the top again and put the eggplant pizza slices in until the cheese just melts, then serve
