Oven-Baked Potato Wedges
Potato wedges — thick potato slices seasoned with herbs, spices, oil and Parmesan, then roasted until golden. A delicious alternative to deep-fried fries.
Potato wedges baked in the oven — very tasty. Serve as a great alternative to deep-fried potatoes.
Ingredients
Start here, then move straight into the method.
- 1 kg potatoes, well washed
- 1/2 cup vegetable (corn) oil
- 1 tablespoon garlic powder (or dried garlic)
- 1 tablespoon paprika or sweet red pepper powder
- 1 tablespoon Italian seasoning
- or
- 1/2 teaspoon dried oregano
- +
- 1/2 teaspoon crushed red pepper
- 1/2 teaspoon dried rosemary
- 1/2 cup grated Parmesan cheese
- 1 teaspoon salt + black pepper to taste

Method
Follow the cooking sequence without leaving the page.
- Cut the potatoes with or without the skin into crescent-shaped wedges or long thick slices.
- Mix all the spices with the oil and cheese, then toss them with the potatoes until well coated.
- Arrange them side by side on a baking tray lined with parchment paper.
- Bake at 200°C for about half an hour.
- When the wedges are golden and cooked, remove them from the oven.
- Serve the potato wedges hot.
