Bulgur with Vermicelli and Chicken

Ingredients

Start here, then move straight into the method.

  • 1 kilo coarse white bulgur
  • Half a kilo vermicelli
  • Chicken
  • 1 dried onion
  • Seasonings: 1 bay leaf + 1 cinnamon stick + 4 cardamom pods + 4 cloves + 4 black peppercorns
  • Oil + ghee
  • 1 tablespoon vegetable stock seasoning
  • Chicken cooking broth
  • Fried nuts + a pinch of cinnamon for topping

Method

Follow the cooking sequence without leaving the page.

  1. First, soak the chicken pieces with lemon juice, vinegar, salt, and a pinch of flour, then rub them well. Wash them with water and drain.
  2. Place them in a pot over the heat with the dried onion until they come to the first boil, then add the seasonings and skim off any foam from the surface of the chicken pot whenever it appears.
  3. Leave the chicken over medium heat until fully cooked.
  4. When the chicken is cooked, drain it from the water and set the broth aside to use later.
  5. Shred the chicken into medium or small pieces.
  6. In a pot over the heat, fry the vermicelli with oil and ghee until nicely golden, then add the bulgur and stir so it absorbs the fats.
  7. Add the vegetable stock seasoning and the broth, using 2 cups of broth for each cup of bulgur, then stir.
  8. When the liquid comes to a boil, reduce the heat, cover the pot, and leave it over low heat until the bulgur is cooked.
  9. Serve the bulgur with vermicelli on a serving platter and arrange the chicken pieces on top with the fried nuts and a sprinkle of cinnamon.
  10. Note: This dish can also be made with meat pieces instead of chicken
