Ingredients
- 2 cups basil leaves, washed and well drained
- 2 garlic cloves
- 1/2 cup olive oil
- 1/2 cup mozzarella cheese
- 1/2 cup nuts of your choice: pine nuts, almonds, or cashews
- A pinch of salt
- A pinch of black pepper
- 1 package of pasta, type of your choice
- Note:
- Pesto sauce is traditionally made with Parmesan cheese and pine nuts.... but you can substitute with whatever nuts or grated cheese you have on hand, such as mozzarella
- Pesto can be stored in small airtight containers in the freezer until needed

Method
- Place the basil, garlic, and the nuts in a blender and grind well with a pinch of salt and black pepper.
- After the mixture is smooth, add the cheese and blend, then finally add the olive oil and blend well.
- Boil the pasta in salted water and add a tablespoon of oil to the water.
- Drain the pasta immediately when cooked and toss with the pesto sauce.
- Pesto sauce is traditionally made with Parmesan and pine nuts... you can substitute with available nuts or grated cheeses such as mozzarella.
- You can keep pesto in small airtight containers in the freezer until needed.
