Mujadara (Lentils and Rice)
Mujadara differs from red mujaddara by using large lentils and, in this version, rice replaces bulgur. Feel free to increase fried onions to taste.
Ingredients

- 2 cups large lentils
- 1 cup rice
- a pinch of salt
- a pinch of black pepper
- 4 dry onions
- olive oil
Method
Follow the cooking sequence without leaving the page.

- Rinse the lentils well, then place them in a pot and cover with water. As the lentils begin to soften, add the rinsed rice with a pinch of salt and a pinch of black pepper.
- Finely chop one onion and sauté in olive oil. Stir this onion into the lentils and rice.
- Cover and simmer on low for about 30 minutes.Timers: 30 min
- Serve the mujadara with fried onion slices on top.
- Note: The crispiness of the onions comes from dusting their wedges with starch before frying.
