- Green squash
- Olive oil
- Onion
- 1 potato, diced
- Salt
- Black pepper
- Sweet red pepper
- Tomato paste
- Hot pepper - optional

Method
Follow the cooking sequence without leaving the page.
- Peel the squash, remove the inner pulp and discard it
- Chop the squash into medium pieces
- Sauté the onion, diced into small cubes, in olive oil until softened
- Add the chopped potato and stir until it cooks slightly
- Add salt, seasoning, and chopped red pepper, stir, then add the squash
- Cook over medium heat for about half an hour or until the squash is tender
- Add the tomato sauce and hot pepper to taste and leave the green squash with tomatoes on the heat a little longer until the sauce thickens
