  • 1 cup flour (all-purpose)
  • 1 teaspoon sugar
  • pinch salt
  • 5 teaspoons yogurt
  • 1 teaspoon baking powder
  • 2 tablespoons vegetable oil
  • Filling
  • A bunch of purslane
  • 1 chopped dried onion
  • pinch sumac
  • pinch chili pepper
  • pinch paprika
  • lemon juice
  • pinch olive oil

Method

  1. In a bowl, combine flour, sugar, salt, baking powder and the oil. Mix well, then gradually add the yogurt while kneading. No water is needed—the yogurt will be enough.
  2. You should obtain a very soft, elastic dough. Let it rest for about 10 minutes, then roll it out or flatten and shape into circles. Fill each circle with a small amount of filling.

  3. Bake the pastries in a preheated oven, from the bottom and top until the dough is cooked and browned.
