Spiral Sfihah
Spiral sfihah is one of the most creative recipes for the tastiest pastries!
Ingredients
Start here, then move straight into the method.
- 3 cups flour
- Half a teaspoon salt
- 1 teaspoon sugar
- 2 tablespoons powdered milk (optional - for a softer dough)
- 2 tablespoons olive oil
- 1 cup or 1 1/4 cups warm water, depending on the flour

- Onion, chopped
- Vegetable oil
- Mixed spices: black pepper - mixed spice - meat seasoning - ground cinnamon - salt

Method
Follow the cooking sequence without leaving the page.
- Mix the dry ingredients first, then add the oil. Start adding the water gradually and keep kneading until you get a soft, smooth dough. Cover it and let it rest for 1 hour.Timers: 60 min
- Sauté the chopped onion in a little oil until softened, then add the meat and spices, stirring until fully cooked.
- You can add pine nuts or almonds, if desired, then set aside until completely cool.
- Place the filling along one long edge of the dough, then roll the dough over the filling into a log.
- Then coil the log into a spiral and continue until all the dough is used.
- Place the filled dough in an oiled tray and bake in the middle of a hot oven at 220°C, or according to your oven, until cooked through, then brown the top.
- Brush the work surface with oil and divide the dough into equal pieces.
- Roll each piece out until thin and nearly transparent, into a rectangle.
