Chickpeas with Curry

  • 3 tablespoons tomato sauce or tomato paste
  • Olive oil
  • 1 onion
  • 4 cloves garlic, crushed
  • 1 tablespoon curry powder
  • Salt + black pepper
  • 1 cinnamon stick
  • 2 cups water

Method

  1. Place a wide skillet over the heat, add the olive oil, and sauté the onion for a few minutes until softened and browned
  2. Add the crushed garlic with the curry powder and cinnamon stick, and stir for a few minutes
  3. Add the cooked chickpeas and tomato sauce or paste, and mix until the chickpeas absorb all the flavors
  4. Add the salt and black pepper, then pour in the water and let the chickpea mixture simmer over low heat
  5. When the chickpeas and curry come to a boil, raise the heat until the chickpeas absorb the sauce and you can control the thickness as desired
  6. Serve the chickpeas with curry in a serving dish and garnish with chopped fresh coriander and lemon wedges
