Okra with meat and lamb ribs — a rich, delicious recipe. Okra is one of the finest and most flavorful stews.

Ingredients

  • Dried okra 150 g
  • Lamb ribs
  • Meat, cut into pieces
  • Small piece of butter
  • Small head of garlic
  • Half a bunch fresh cilantro (coriander)
  • 4 ripe tomatoes, chopped
  • 1 tablespoon tomato paste

Method

  1. Boil the okra until it becomes slightly tender.
  2. Place it in a colander to drain off the water.
  3. Fry it in a little oil without letting it brown, then place it on kitchen paper to absorb the oil.
  4. In a pot, put the lamb ribs and meat pieces and brown them until the liquids evaporate completely.
  5. When their color changes, add butter, crushed garlic, and chopped coriander and sauté briefly.
  6. When they soften, add the tomatoes and tomato sauce with about 1 liter of water.
  7. Bring to a boil, then reduce the heat, cover, and simmer until the meat is tender.
  8. When the meat is cooked, add the okra and salt, then let them simmer for 10 to 15 minutes.

  9. Serve the okra with meat and lamb ribs with fluffy rice with vermicelli.
