Fennel Omelette Patties

Ingredients
Start here, then move straight into the method.
- 2 bunches fennel
- 8 eggs
- 4 tablespoons all-purpose flour
- 5 spring onion stalks (green onions)
- 6 garlic cloves
- A pinch of salt
- 1 tablespoon baking powder
- Note
- If the mixture is too thick, you can add 1/4 cup of water.

Method
Follow the cooking sequence without leaving the page.
- Wash the fennel well, cut off and discard the stalks, then finely chop its fronds
- Finely chop the onion and garlic and add them to the fennel, then sprinkle over the flour mixed with baking powder
- In a bowl, beat the eggs with a pinch of salt, then add the egg mixture to the fennel and mix well
- Add a little salt to taste
- In a non-stick pan, add a little oil and pour in a small amount of the mixture, spreading it slightly with a spoon so it is thin
- Cover the pan and leave it for one minute, then remove the lid
- When the omelette browns on the first side, flip the fennel omelette to the other side until the patties are browned on both sides
- Serve the omelette alongside vegetables such as cucumber and tomato
