Recipe story

Easy croissants made with a tried-and-tested recipe and guaranteed to turn out well! A croissant recipe kids will love and keep asking for :) And of course, lighter and healthier than ready-made croissants.

Ingredients

  • 5 cups flour - or as needed for the dough
  • 1 tablespoon instant yeast
  • 3 tablespoons ice-cold water
  • 3 tablespoons sugar
  • a pinch of vanilla or 1 teaspoon liquid vanilla
  • 1/2 cup butter
  • 100 grams cold butter for layering the dough later
  • a pinch of salt

Method

  1. First, knead all the ingredients very well for enough time until fully combined
  2. Add the first amount of butter set aside for the dough and knead well
  3. Let the croissant dough rest in the fridge or in a cool place for about 1 hour
    Timers: 60 min
  4. After that, take the dough out of the fridge and roll it into circles or squares
  5. Place pieces of the butter we set aside on each circle or square, then place a second circle or square of dough on top, and continue until all the dough and butter are used up
  6. Place the dough squares with butter in the freezer for about 1 hour, until the butter is well frozen
    Timers: 60 min
  7. After the time has passed, take the large croissant square out of the fridge and roll it out again into a large square or circle
  8. Then start cutting the croissant dough into triangles and fill as desired with cheese, thyme, or chocolate, then roll them into beautiful croissants
  9. Let the filled and shaped croissants rise in a warm place for at least 2 hours
    Timers: 120 min
  10. After the time has passed, brush the croissants with egg or milk, then place them on parchment paper on a baking tray and bake at 170 degrees for about 15 minutes, or until golden and cooked through
    Timers: 15 min
